açucar, a gosto

Summer time is perfect for moments of laziness in the sun, either on the terrace, on the beach, in the park... or just around a barbecue at home! Those that last all Sunday afternoon... last weekend I tried for the first time a homemade sangria to go with the meal - a simple recipe invented at the time and now I'm a fan!
Try it too, with these or other ingredients, just use your taste and imagination.

I gathered in a jar:
1 bottle of fresh red vinho verde (it's a Portuguese variety, but use what you will!)
25cl of fresh tonic water
1 unpeeled apple cut into slices
1 orange with peel cut into pieces
1 cinnamon stick
juniper berries, to taste
mint leaves, to taste
sugar, to taste
and, for the brave, a little chilli ;)

Good Summer to all!

Bom apetite!

To make juices can become addictive... it's easy to do, a practical way to eat more healthy food and there is always that curiosity to know how the new daily combination will turn out.
Without falling into exaggeration of diets and detox strategies, I remembered to try to make juices, when I feel like it (sometimes at breakfast, but usually as an afternoon snack), to consume more vegetables and especially fruit (I try to eat daily, but I'm sometimes lazy...). And it's been fun discovering new colors and combinations of flavors (usually of the ingredients that are available in the fridge at the moment)... so I haven't resisted to populate my instagram with these images.

Out of curiosity, here are a few combinations I've already tried - just put everything in the blender cut into pieces, put it at work until it gets the desired consistency and serve in a pretty glass!

1/2 courgette + 1 tomato + 1 peach + 1 banana + 1 red pepper + little water
On top: linseed and sunflower seeds.

Leaves of broccoli + 2 slices of melon + 1 carrot + little water
On top: sunflower seeds.

2 slices of melon + 1 plum + 1 tomato + natural yogurt
Aside: toasted wheat cereals.

Enjoy!

We're not in Summer yet, but sometimes it feels like eating a lighter - or faster - meal and with simple ingredients you can prepare something different without much effort.
I leave you with a vegetarian  idea.

Grilled eggplant with salad
[add to taste, depending on the number of people and the appetite]
eggplants
mushrooms
salad with lettuce and arugula mix
tomato
croutons
feta cheese
plain yogurt
olive oil
oregano, salt and pepper, to season

Cut the eggplant into slices, season with salt and remove the excess before grilling in a pan with a little olive oil. Leave grilling a few minutes on each side, until it begins to toast.
In another small saucepan, sauté the sliced mushrooms in a little olive oil, season with salt and pepper.
Meanwhile, prepare the salad, chopping the tomatoes and feta cheese in cubes and then joining the croutons.
For the sauce: mix the yogurt with oregano or other herb of choice, a little salt and pepper.
Serve with a salad of lettuce and arugula, in the company of fresh or toasted bread - it's great to make small open sandwiches with the ingredients of the dish, at will, while snacking... enjoy!

Poder picar diferentes entradas, partilhar pratos, cruzar ingredientes inesperados.

Valentine's Day was a great excuse for us to get to know another Japanese restaurant in town : Ichiban, in Foz. Good atmosphere, good service, and most importantly: a varied menu full of surprises not very common in most Japanese restaurants in town.

I really like sushi, but this time we took the opportunity to try some new dishes of this rich cuisine. More than enjoying the flavors it pleases me the ritual of a slow meal, intended to savor and socialize while eating. Try different appetizers, share dishes, mix unexpected ingredients.

The best discovery of the dinner was undoubtedly the gindara - a Japanese dish made with black cod left to marinate for days, which is left with a texture of butter and a heavenly flavor. I ended the meal with the feeling that nothing I eat from now on will ever taste the same.
Out of curiosity I wanted to know more about this dish and here is a recipe. If you also have the opportunity, try it - if you enjoy this type of cuisine, you'll surely love.
How about you, do you enjoy Japanese food?

Partilhem... e bom apetite!

The celebrations of Christmas and New Year are a great time for gatherings with friends.
They may not be those people we have dinner with on Christmas Eve or make the New Year's toast, but they are special to us all year long, so it makes perfect sense to share the party spirit with them too. That's why this time of the year there are a lot of gatherings and dinners with family, friends or coworkers... around here, every year we keep the tradition of a Christmas dinner with the closest group of friends from college. As some have left the country in the meantime, this is now an extra chance to meet them again.

This year, instead of the usual meeting at the restaurant, we chose a more comfortable dinner at our home, so I took my time looking for recipes of simple but exquisite snacks, for a dinner that we wanted to be informal and with a full table! To choose and prepare the table for friends was part of the joy of receiving them after.

Here are some ideas of snacks you can prepare in advance, to bite along a nice evening chatting with friends...
> little kebabs of date and banana
> little kebabs of melon with ham
> sweet cottage cheese: drizzled with honey and served with walnuts
> and salted cottage cheese: with pimenta da terra (an Azorean pepper paste), for those who like a spicy touch
> to go with bread and toasts: chickpea hummus and homemade tuna pate
> green salad of lettuce and arugula
> salad of tomatoes, mozzarella and croutons, in the company of yogurt sauce with herbs
> sauteed slices of carrot with Moroccan spices
> pot pie of alheira (a kind of Portuguese sausage) and cauliflower
> vegetable quiche

Pot pie of "alheira" and broccoli

Friday, 26 April 2013

i n g r e d i e n t e s
400 g de bróculos
1 alheira
1 dente de alho
200 ml de molho bechamel
1 ovo
azeite q.b.
sal q.b.
pimenta q.b.
noz moscada q.b.

Juntar a alheira desfeita, misturar bem e retirar do lume.

Bom apetite!

I had already tried this recipe from the site Vaqueiro. This time I felt like repeating, but instead of the needed cauliflower I had only broccoli instead... it didn't seem wrong to make some adjustments! Here it goes:

Pot pie of alheira and broccoli

i n g r e d i e n t s

400 g of broccoli
1 alheira (a typical Portuguese sausage)
1 clove of garlic
200 ml of bechamel sauce
1 egg
olive oil as needed
salt as needed
pepper as needed
nutmeg as needed
breadcrumbs as needed

c o n f e c t io n
Bring to boil a pot with salted water, separate the broccoli sprigs and introduce in the pot when boiling. Drain when they're soft.
Give a cut all around the alheira and cook in a pan with olive oil. When ready, remove the skin and tear apart.
Bring to boil a pot with olive oil and the chopped garlic clove, add the broccoli and bechamel sauce and mix. Season with pepper and nutmeg.
Add the alheira, mix well and remove from heat.
Place the mixture in a baking tray.
Beat the egg with a fork and cover the misture with it.
Add a thin layer of breadcrumbs.
Bake in the pre-heated oven for about 20 minutes for browning.

Serve with slices of toasted bread and tomato salad dressed with olive oil and oregano. Bon appetit!

i n g r e d i e n t e s (para 2 pessoas)

Bom apetite!

I never had the habit of buying magazines, even less about cooking. But lately, when I pass by this one while shopping, I end up bringing it home... perhaps because the price is inviting and I increasingly feel the need to be inspired by new recipes when I think about cooking - and for me, the internet still can't replace the pleasure of flipping through a paper publication.

This time, I opened the last magazine on page 40 and followed a recipe that seemed perfect for using the shark pieces I had here at home, but I had to do my usual changes, as you already know... so here goes:

Shark with coriander

i n g r e d i e n t s (for 2 people)
bread with 2 days (I used 4 slices of homemade bread that I had made in the bread machine)
2 small shark pieces (about 300g)
100g frozen peeled shrimp
250g spinach leaves (I had to use frozen)
olive oil as needed
1 onion
2 cloves of garlic
1 bunch of coriander
1 bay leaf
1 teaspoon of paprika
2 tablespoons of white wine
1 tablespoon of all-purpose flour
salt as needed
water as needed

m e t h o d
Sauté the bay leaf, the chopped onion and garlic in olive oil in a large pan.
Add the shark and cook briefly. Add the white wine, season with salt and paprika. Add a little water and cook for about 10 minutes in low heat.
Sprinkle with the chopped coriander and wrap it well.
Dissolve the flour in a little water and add to the fish, to bind the sauce. After about 3 minutes, correct the seasoning and remove from heat.
In the meantime, you should toast the bread and take care of the spinach, by cooking it in a frying pan (or in a pot with little water, if fresh).

To serve: place the slices of bread on the dish , place over a bed of spinach and finally the shark covered with the sauce. I could't resist to decorate it with some delicious cherry tomatoes.
Bon appetit!

Dourada assada
Dourada assada

i n g r e d i e n t e s
1 dourada pequena por pessoa
batatas pequenas, para assar, cortadas às rodelas
sal
alecrim seco
azeite
+ para o molho (quantidades a gosto):
alho picado
folhas de coentros frescos picadas
sal
pimenta branca
sementes de mostarda amarela
azeite

During the weekend I prepare lots of vegetarian meals. On weekends, when we dine at home, I try to prepare something special, often fish, in search to avoid meat... as to grill fish isn't that easy, I usually chose to make it in the oven - besides easy is a delicious option!
This time, the recipe has nothing fancy about, the only secret lies in the sauce, in which I used some of the herbs and spices we recently bought. If you want to, you can also try this gilthead bream with coriander sauce:

i n g r e d i e n t s
1 small gilthead bream per person
small potatoes, sliced
salt
dried rosemary
olive oil
+ for the sauce (use as needed):
chopped garlic
chopped fresh coriander leaves
salt
white pepper
yellow mustard seeds
olive oil

m e t h o d
Smash all the sauce ingredients in a mortar.
Place the fish in an oven container and properly distribute the prepared sauce inside and outside of the fish.
Place the potatoes in another container, sprinkle with olive oil, season with salt and plenty of rosemary.
Bake for about 30 minutes (cover the fish with an aluminum foil, to prevent burning).
Et voilá!

Utrecht (143)
Utrecht (142)
Rotterdam (233)
Rotterdam (232)
Den Haag (326)
Rotterdam (311)
Rotterdam (351)

One of the things I like to do when I travel is to taste local cuisine. I don't mean only or necessarily the most traditional and typical dishes - to eat the kind of international cuisine that is usually consumed in the city is also a way to absorb the local culture and try dishes that we have no opportunity to eat at home.
While traveling I don't eat on a schedule, which means I often end up eating snacks during the day and have a more substantial meal or even a special one for dinner - if the wallet allows.
In addition to the dishes that make up the main meals I don't resist tasting the sweets and occasionally stopping for a coffee... and under the Dutch cold, to stop at a cafe for a cappuccino and a typical apple pie tasted really good!
In Amsterdam and Rotterdam we ended up having some oriental food, as there are many Indonesian, Thai or Chinese restaurants - in Rotterdam's Chinatown is even hard to make us understand... but the appetizing pictures of dishes say it all - or nearly... sometimes some spicy details may be hidden.
But when we like to try different flavors it's hard to be afraid to take some risks, right?

Concerning the food I fondly remember the famous apple pie - with whipped cream, for me, please - specialty at Dudok, where we stopped in Rotterdam and The Hague; and salty snacks of meat and cheese accompanied by a delicious bread and different sauces that you can find in most bars and snacks - and in the company of a good beer, music and lots of laughter they taste even better!

St. Martin of Tours day is celebrated on November 11th, the date that this year presented us with three pairs of 1s (11/11/11).
For here it's usual to combine the celebration of the Saint with the popular feast of Magusto, when we use to roast chestnuts, drink jeropiga (a kind of fortified wine) and eat caldo verde (a delicious traditional soup).

In the afternoon, while we walked around a full downtown, we saw many queues at the roasted chestnuts street stands... smoke hung in the air, opening the appetite, and many people didn't resist the delightful ritual of eating chestnuts from a cone made of wasted newspaper while walking calmly, already thinking about Christmas shopping.
I confess that I don't particularly care about Magusto, but I do love to eat chestnuts (warm with butter!), so we also celebrated a day later and made out of Saturday night a feast of our own!
As for Frida, she'd rather hide from the cold upon the couch.

i n g r e d i e n t e s

Mango Lassi

Today I share with you a recipe of an Indian drink: fresh, delicious and perfect for summer!
I had drank mango lassi before, but it was in this book by Jamie Oliver where I found the recipe to try it at home... and what a delight! Good, smooth, creamy, fresh... I used natural ripe mango - and I advise it. Add sugar to your taste - I like it sweet, but if the mango is already too deliciously sweet, don't abuse.
A recipe to repeat!

i n g r e d i e n t s

255 ml of plain yogurt (I used two individual packages)
130 ml of milk
200 g of natural mango, sliced (or 130 ml of canned mango pulp)
4 tablespoons of sugar (adapt to your taste)

m e t h o d

Couldn't be easier! Just put it all together in a blender and blend for about two minutes.
Taste to see if the sugar dose is at your taste and enjoy ... slowly!
I only advise the following: let the ingredients in the fridge before use, so the drink gets chilled, it would be a shame to have to add ice or to keep it in the fridge before drinking. Jamie says that you can keep the Lassi in the fridge for about 24h, but I would advise to drink right after preparing it, is how it gets better ;)
I hope you enjoy it as much as I do!

i n g r e d i e n t e s

2 chávenas de óleo
3 chávenas de farinha de trigo
2 chávenas de açúcar
4 ovos

Sempre a bater fui adicionando a farinha, gradualmente, a canela, o fermento e o sal.

O bolo fica de-li-ci-o-so! Experimentem!

Sometimes, for no apparent reason, I feel like baking a cake. I've already admitted that sweets are not exactly my specialty in the kitchen, but this doesn't stop me, because I'm greedy enough not to care if the result is less good (when it comes to sweets, it's quite difficult to be bad)!
On one of these nights, while cooking dinner and looking at some apples already too ripe, I thought about searching the net for some apple cake recipe, which I love. I found one that's suposed to be the best apple cake in the world, so with that argument, I couldn't resist to try it... and I can say I was convinced! Try it and tell me if it's not true!

Since I changed the dosage of the ingredients (don't ask me why, but using the ingredients of the recipe the mix wasn't creamy enough, so I improvised) I leave here my version. The photo doesn't make justice to this delicious cake, but... that's the result of taking photos indoors, at night... just trust me and try this cake!

i n g r e d i e n t s

2 cups of oil
3 cups of flour
2 cups of sugar
4 eggs
1 tablespoon of ground cinnamon
1 teaspoon of baking powder
1 teaspoon of salt
3 apples (the recipe calls for Granny Smith, but to have an idea I used three different types and it worked great), peeled, seeded and diced in cubes.
1 cup of nuts (optional - I didn't use, but I leave you with the suggestion, because it must be delicious with nuts)

c o n f e c t i o n

At first, I spread with butter and sprinkled with flour a round cake tin of about 25 cm in diameter without a hole.
Then I put in a bowl the oil, eggs and sugar and beat with an electric mixer until it became a smooth cream. Then, still beating, I added the flour, gradually, the cinnamon, baking powder and salt.
After the mixture is homogeneous, I stopped beating and added the apples, mixing with a wooden spoon. At this point you can also add the walnuts, if you want to.
Finally, I placed the mix in the cake tin and took it to the preheated oven at 180 degrees Celsius for about 40 minutes and... voilà!
Use the toothpick trick to know when to take the cake from the oven (pierce it at the center of the cake and when it comes out dry it's ready).
Let it cool, unmold the cake and turn it again upside down, because that's how it will look better!

The cake is delicious! The recipe is simple and easy to make... the combination of apple and cinnamon is perfect, the cake is slightly damp and with a crispy shell... I served it with vanilla ice cream, because I love the contrast between the ice cream and a cake still a bit hot from the oven. Try it!

Barbecue day (01)
Barbecue day (02)
Barbecue day (04)
Barbecue day (05)
Barbecue day (06)
Barbecue day (07)

Fizemos no Sábado o nosso primeiro churrasco do ano!

Saturday we did our first barbecue of the year! The weather was not perfect, but we still managed to get outdoors.

We don't exactly have a garden or terrace of our own, but as the habitation blocs where we live in face some courtyards that are relatively sheltered from the rest of the city, people can use them to make barbecue in this kind of community space. Although anyone can access these courtyards, people only pass through them to get to the subway station (which has other better access), so they end up being used mainly by residents. One of the courtyards is on grass, the other is composed of lawn areas with trees and the middle one is on soil. Our house is placed on the block between the last two courtyards, which is the ideal location: on the one hand we can see the trees that inhabit the more pleasant courtyard from home, on the other hand we have access to the soil courtyard, perfect for barbecues, for example. This courtyard is usually the one children love best, where they like to play and ride the tricycle and is also where you can put a grill next to the stairs that lead to the kitchen and have a barbecue at the doorstep... is also here that we usually hold S. João feast. These first sunny days of the year begin to make way for the neighbors barbecues, either at lunch or dinner. On Saturday we decided to have our first barbecue this year too.

The barbecue is the perfect meal to stretch along the afternoon on a sunny day... to make slowly, in the company of a beer. When we make barbecues, we don't forget to grill peppers, which are delicious cooked on the coals and we usually boil jacket potatoes and then bake them a little on the grid... they're the perfect side dish! The versatility of the barbecue is also its best feature: meat, fish or vegetables... you choose and everybody's happy!
How about you, do you like barbecue?

i n g r e d i e n t e s (para 2)

1 dente de alho
1 mão bem cheia de folhas de manjericão
meia mão de pinhões
1 mão cheia de parmesão ralado
azeite q.b.
sal marinho e pimenta preta q.b.

Lately, when I'm looking for a new recipe for cooking it's not unusual to pick this book. I love Italian cuisine and I think that Jamie seems to make everything much easier and funny.
I have long heard about the famous pesto sauce, but the truth is that I had never eaten and found here an excellent reason to always have a vase with fresh basil at home!
It's a very easy and quick recipe. I've read others, however, with some minor differences, but I used this one:

i n g r e d i e n t s (for 2)

1 clove of garlic
1 good handful of basil leaves
half hand of pine nuts
1 handful of grated parmesan
olive oil as needed
sea salt and black pepper as needed
a little lemon juice

c o n f e c t i o n

I put in a food processor (you can also easily use a plestle and mortar, but of course it will take a bit longer) the garlic broke in pieces, a little salt and the basil leaves. Pulsed. I added the pine nuts and pulsed again.
I turned out the mixture to a bowl and added half the parmesan. I added a little olive oil and stirred slowly. The oil is essentially to bind the ingredients together and it doesn't need to be too much, so you should be adding a couple of cheese and olive oil alternately until the sauce gets the desired consistency. I seasoned with pepper (more salt if needed, but I'd rather not give it a touch too salty, beacause the cheese and basil already have a pretty strong taste) and added the rest of the parmesan. I added more olive oil, mixed and added a bit of lemon juice, which intensifies the flavors. Lemon is optional, but I think it tastes good!

In the beginning I had left the spaghetti cooking, so now I drained it and served on plates. I mixed the sauce with the spaghetti and... yummy!
I'd never tried it, but I've read that the sauce can be stored for 2 or 3 days in a jar in the fridge, so you can always make in excess for later use. You can also use the sauce in other recipes... Jamie himself suggests some.

As you can see, the doses of the ingredients are only approximate, because it all depends on the personal taste of each one... some people like a more intense garlic flavor (like me!), a thicker sauce, saltier, with more or less cheese... some even don't like pine nuts (I don't particularly appreciate it, but used them to be faithful to the original recipe) and replace them with nuts, for example. Adapt to your taste and enjoy!

i n g r e d i e n t e s

150g de manteiga
100g de açúcar amarelo
3 ovos

O interior do bolo fica denso e húmido... é a minha versão preferida!

Banana and chocolate cake

Today I leave you with a delicious recipe to try on the weekend! Although these good warm days are ideal for light meals with fewer calories, there's nothing like a delicious candy to make us break the diet! (Mine, at least...)
I had never tried to make banana cake and it seemed to me that the combination would be strange... but as I had too many bananas at home, some of them already ripe, I decided to try this recipe that combines banana with chocolate (yummy!) and the result was so unexpected as... good!

i n g r e d i e n t s

150g butter
100g brown sugar
3 eggs
3 small ripe bananas (or 2 large)
175g all-purpose flour
1 teaspoon of baking powder
3 tablespoons of cocoa powder
2dl cream
powdered sugar for dusting (optional)

c o n f e c t i o n

Preheat the oven regulating it to 180 degrees C.
Melt the butter in a double boiler or in the microwave and mix it with the sugar using an electric mixer. After forming a cream, add the eggs one at a time, stirring constantly.
In the meantime peel the bananas, crush them with a fork and add them to the previous cream.
From here I used only a wooden spoon: I added the flour mixed with the baking powder and the cocoa powder, finally added the cream and mixed well until the mixture was homogeneous.
Then you just have to grease a cake tin with a hole with butter, sprinkle it with flour, pour the mixture into it and bake for about 30 or 40 minutes.
I always use the toothpick trick to see when I should turn off the oven: you should stick the toothpick in the middle of the cake and when it finally comes out dry the cake is ready!
Allow it to cool and unmold it. The recipe suggests sprinkling the cake with powdered sugar, but I missed that stage... and passed at once to taste the cake!

The interior of the cake is dense and moist... it's great to combine with a soft drink or iced tea on these days that seem almost summer. Or better yet: serve it accompanied with a scoop of vanilla ice cream for dessert... this is my favorite version!

i n g r e d i e n t e s

Stuffed portobello mushrooms on a bed of cereal bread

This recipe was born by chance and I confess that worked really well! I had never cooked portobello mushrooms and I was not sure what to do with them when I bought them. Once in the kitchen, I combined them with ingredients that had waiting in the fridge... some because they were fresh and had to be used, others because they had left over from previous recipes - and the combination proved to be surprinsingly perfect.

i n g r e d i e n t s

large portobello mushrooms (1 per person)
slices of cereal bread, (I used bread I had made some days before in the bread machine, using flour with seeds)
1 cottage cheese
2 tomatoes
1/2 red pepper
1/2 package of cream or grated cheese
garlic, olive oil and dry oregano as needed

c o n f e c t i o n

You should use a rectangular baking dish, appropriate to fit the bread slices in layers.
I sprinkled the bottom of the dish with olive oil and placed the first layer of bread. I sprinkled the bread with little olive oil, with the chopped garlic clove and one of the sliced tomatoes. I placed the second layer of bread and sprinkled one more time with olive oil and a clove of chopped garlic. You shouldn't use too much olive oil, but at the same time if it is too little the bread will be dry - use as you feel like.

Put the mushrooms upon the bed of bread with the foot up, stuff them with the cottage cheese cut into slices (I used my hands to crush it inside the mushroom) and put a round slice of tomato on top of each.
Slice the red pepper into little cubes and distribute them over the mushrooms. I put on them a bit of cream (because I had an open package in the refrigerator, but you can use grated cheese instead) and dry oregano.

The baking dish went to the oven for about 30 minutes.

The bread was moist and flavorful because of the seeds, the garlic and olive oil that seasoned it and served as a great side dish to the mushrooms... I became a fan! Try it and tell me what do you think.
